Nachos for any occassion

Ingredients A large handful of any commercial brand tortilla chips, grated cheese of your choice from sharp cheddar to Mexican to Italian, an array of chopped vegetables and meats to taste.

On a microwaveable plate, arrange a flat layer of chips to cover the surface, then layer on your toppings. Depending on how many people you intend to serve, you can arrange layer upon layer to suit your needs. I usually arrange my layers with chips, then veggies, then meats, then cheese, but you can do it in any order you like. Place your arranged nachos in the microwave on high and cook for 1 minute, checking every 30 seconds or so to see where the cheese is at in the melting process. When the cheese is melted to your liking, pull out and top with salsa, sour cream, hot sauce, or whatever you like to add. Hot, tasty, crunchy and delicious.

Variation: For those among you who like to dip your chips instead of having them come with all the goodies on top, good news. Simply arrange your chopped cheese (it's best to use a cooking cheese like Velveeta or one of the various imitators for the base)in a microwave bowl, add your extra cheese or chopped peppers to the bowl, put in the microwave for 2 minutes, and check every 20 seconds or so to make sure it is melting uniformly. Stir the mix occasionally to ensure consistent melting. Pour over your chips, or simply place the bowl on the table with the chips and let the consumers figure it out.
